Paleo Candy: Bacon Infused Dark Chocolate Bark with Nuts

Sometimes, okay, often times, it’s hard to stay Paleo.  I crave cookies, I want bread, and on occasion the dancing bubbles of a soda are missed. When you’re *trying* to embrace Paleo, sweets are tough.  It’s hard to sit back and watch the kiddos eat Blue Bell Homemade Ice Cream, while I pretend that my bananas are the perfect dessert.  I’ll admit it, it is summer, and although I haven’t had ice cream, I have had other non-paleo treats. Eh… it happens.  BUT… I have also had this: Paleo Candy {Bacon Infused Dark Chocolate Bark with Nuts}.

My husband did the sweetest thing for me, he made me this yummy bark.  I could marry this man a thousand times over and over again! (No, not just for the paleo candy.)  The two of us needed a Paleo dessert in the house, so he decided to make us Paleo Candy.  It is delicious 🙂

Here’s What You Need:

  • 2 cups of Dark Chocolate Chips
  • 2 tbs of Bacon Fat (If you’re Paleo or grew up in a Latin or Southern family you have a cup in the fridge.. truth)
  • 1 cup Nuts any kind will do. We used pecans and walnuts
  • Optional* Himalayan Salt or Kosher Salt enough to sprinkle on top of the all the bark
  • Heavy duty glass bowl
  • Pot
  • Cookie sheet
  • Parchment paper
  • Spatula

 

Here’s How He Did It:

  1. Create a double boiler, using a heavy duty glass bowl placed on top of a pot of boiling water. Add chocolate and bacon fat to glass bowl.
  2. Add chocolate chips and bacon fat to glass bowl. Stir the chocolate and bacon fat until the chocolate is smooth and creamy.  The bacon fat must also be completely melted in.
  3. Pour chocolate onto parchment paper placed on a cookie sheet.
  4. Spread chocolate and bacon mixture evenly across the parchment paper.
  5. Hand sprinkle nuts and salt over the chocolate before it hardens.
  6. Place the cookie sheet in the freezer for one hour or until the chocolate hardens.
  7. Once hardened, break the chocolate into pieces
  8. Enjoy!

    This looks heavenly! Bacon and chocolate…yummmmm. I am so intrigued about the Paleo program. I wonder if I could stick to it.

      This was such a yummy treat. I’ll be 100% honest with you Paleo is tough. I haven’t committed 100% because I’ve done 100% in the past for a month, it was HARD. Once you break paleo it’s hard to go back. However, you can! You’re allowed cheat days, and it’s not meat all day, everyday. I know some people say paleo is all about meat & bacon but it’s also veggies. The first few days your body craves sugar, because we eat lots of sugar in the foods we omit with paleo.
      I wish I could go full paleo but at this point, I haven’t, I’m a cheater…..
      Maybe you can implement Paleo days? In the past we implemented vegetarian days here, the kids did not mind at all.

    Oh sheesh. I’d go Paleo just for this!
    My sister did it for 30 days and she said, “Never again!” So I really commend you.

      Ha ha! No need to go paleo, just enjoy. Paleo is tough! I want to be 100% transparent, as much as I aspire to be Paleo, I’m more Paleoish. I’ve gone 100% Paleo for a little over a month in the past, it was one of the toughest things, the first few weeks are the hardest.
      For the most part I’m just cutting the crap, reducing my carb intake immensely, and trying to implement a Paleoish lifestyle… I don’t want to beat myself up if I have cake 🙂

    YUM!! A friend of mine makes chocolate covered bacon for all of our mom’s nights, but this would be a great alternative!

      What a WONDERFUL friend!! Chocolate bacon. I made my husband candied bacon one year for Father’s day, and he acted like it was the best thing he’d ever tasted 😀
      Next time we make this recipe, we plan on adding dried fruit too.

    This looks yummy. I am not Paleo but I eat a grain-free and low sugar diet so I look for Paleo dessert recipes. I will have to find some sugar free chocolate chips and try this out.
